Orange
Cinnamon Baked Apple
Dates and raisins make this apple taste like apple pie!
Prep
Time: 10 minutes
Cook Time: 40 minutes
Oven: 350 degrees
Yield: 4 servings
4 cooking
apples such as Macintosh
3/4 cup dark brown sugar
1-1/2 cups orange juice
1/2 tsp cinnamon
4 Tbsp chopped dates
4 Tbsp golden raisins
Chopped pecans or cinnamon and whipped cream for garnish
Wash and
core the apples. Peel around the top of each apple about 1 inch to
allow the apple to expand while cooking. Place apples top up in a
cooking dish. Stuff the core of each apple with a mixture of dates
and raisins.
In small
bowl whisk together the brown sugar, orange juice and cinnamon until
blended. Pour mixture over the apples and bake in preheated
350-degree oven for 40 minutes or until apples are cooked. Baste
apples often with pan juice.
Garnish with
finely chopped pecans or dusting with cinnamon and whipped cream.
